Associate Professor of Consumer Economics and Food Marketing
Professor Beatty works on the economics of food nutrition and health. His research relates to the empirical analysis of consumption behavior, in particular as it relates to health outcomes. Recent research has tended to focus on food consumption and the demand for nutrition and health, at both the household and aggregate levels.
Current research includes studying the trade-off between heating and eating, the use of Engel curve methods in CPI research and the effect of anticipated and unanticipated cash transfers on spending patterns and dietary quality. Recent research has been published or is forthcoming in the American Economic Review, the American Journal of Agricultural Economics, Journal of Heath Economics and the Journal of Econometrics.
